6 bacon slices, chopped
1lb (500g) sweet potato, peeled and diced
1 cup SOMETHING SPECIAL GOURMET ANTIPASTO
1/2 cup grated white cheddar cheese
8 eggs
salt and freshly ground pepper
red pepper dip to serve, optional
 
This can be served warm or cold.

Preheat the oven to 350F (180C). Grease an 8 x 8 inch (20 x 20cm) square baking pan.

Cook bacon in a medium frying pan over medium high heat until browned. Add sweet potato and cook, stirring occasionally, for about 10 minutes or until tender.
Scatter sweet potato mixture, cheese and Something Special Gourmet Antipasto in prepared pan.

Whisk eggs and a pinch of salt and pepper together in a medium bowl. Pour over Something Special Gourmet Antipasto mixture and swirl the pan to make sure egg mixture is evenly distributed. Cook, uncovered, in preheated oven for about 25 minutes or until set and golden.

Let stand in the pan for 15 minutes before inverting onto a plate and cutting into small squares. Top each square with a little red pepper jelly if desired. Serve warm or cold. Serves 4 to 6.
