1/4 cup SOMETHING SPECIAL JALAPENO (OR RED PEPPER) DIP
1/2 cup sun-dried tomatoes in oil, drained and thinly sliced
1/3 cup dried black olives, pitted and coarsely chopped
1/4 cup chopped fresh flat leaf parsley
1 baguette, split and cut into 4 pieces
1 cup spinach leaves, approximately
1 cup grated white cheddar cheese |

Combine dip, tomatoes, olives and parsley in small bowl. Spread mixture into baguette pieces. Add spinach leaves and cheese. Place in panini press, two sided grill or sandwich maker and cook for 3 to 5 minutes or until golden brown. Or heat a barbecue to medium and cook for about 3 minutes each side until golden and crunchy. Makes 4.
