Brie/Pear/Pom-Cran Quesadillas

An interesting variation on a familiar combination of brie cheese and pear…INGREDIENTS8 nine inch (23 cm) tortillas
2 firm, ripe pears, thinly sliced
2 green onions, finely chopped
3 tablespoons (45 mL)
Something Special Pomegranate Cranberry1 small wedge brie cheese, thinly sliced
Dash fresh ground pepper, to taste
1 teaspoon (5mL) olive oil, for grilling
METHOD1. Spread one tortilla with 1 - 2 tsp of
Something Special Pom-Cran.
2. Top with sliced pear then brie cheese, as desired.
3. Sprinkle with a teaspoon of chopped green onions and freshly ground pepper, to taste.
4. Top with a second tortilla.
5. Heat 1/8 tsp olive oil in a non-stick fry pan on medium-low heat. Add prepared quesadilla and grill until cheese is melted and tortilla is lightly browned.
6. Transfer to a cutting board and cut into wedges with a sharp knife or pizza cutter.
7. Repeat with remaining tortillas.
Serves 4 – 6 as an appetizer.
