Baked Fish with Chili & Lime
This recipe can use any one of the following Something Special products:
Gourmet Red Chili •
Red Chili Pepper Spread •
Gourmet Jalapeno •
Gourmet Pomegranate
3 limes, thinly sliced
2/3 cup cilantro leaves, coarsely chopped
4 halibut fillets (about 1 1/2 lbs/750g total weight)
1/3 cup your favourite
Something Special Dip or Spread, warmed
1/4 cup soy sauce
pinch of salt and freshly ground pepper
Preheat oven to 375°F (190°C).
Lay 4 pieces of parchment paper on counter. Place half the lime slices in centre of each piece of paper. Sprinkle with half the cilantro. Top with fish. Arrange remaining lime slices and cilantro over top of fish. Combine soy sauce, dip, spread and a pinch of salt and pepper in a small bowl. Drizzle over fish. Wrap parchment paper around fish to form a parcel. Place on baking sheet. Bake in preheated oven for 15 to 20 minutes or until cooked. Serves 4.
