Chicken with Almonds and Ginger
This recipe can use any one of the following Something Special products:
Gourmet Red Chili •
Red Chili Pepper Spread
4 boneless, skinless chicken breasts
extra
Gourmet Red Chili to serve
steamed jasmine rice to serve
sliced green onions to serve
MARINADE1/2 cup ground almonds
1/4 cup soy sauce
1/4 cup
Gourmet Red Chili2 tablespoons lemon juice
1 tablespoon finely grated fresh ginger
1/2 teaspoon freshly cracked black pepper
4 garlic cloves, minced
To make the marinade, combine all ingredients in a large non-metallic bowl or large re-sealable plastic bag.
Remove tenderloin from each piece of chicken; add to marinade. Cut each piece of chicken crossways on an angle into 4 or 5 pieces. Add to marinade and stir to coat. Cover or seal and chill for 30 minutes or overnight if time permits.
Heat a greased grill pan or barbecue to medium-high. Cook chicken for 5 to 6 minutes per side until cooked through and no pink remains. Serve chicken on rice with extra dip and green onions. Serves 4 to 6.
