Chicken Salad Rolls
This recipe can use any one of the following Something Special products:
Gourmet Red Chili •
Red Chili Pepper Spread •
Gourmet Jalapeno •
Gourmet Pomegranate
8 x 9 inch (22cm) round rice paper sheets
2 cups of cooked chicken
1 cup grated carrot
1/2 English cucumber, quartered, seeds removed, julienned
1/2 cup thinly sliced green onion
3 tablespoons chopped fresh mint
RED PEPPER SAUCE1/4 cup your favourite
Something Special Dip or Spread2 tablespoons lime juice
2 garlic cloves, minced
2 tablespoons fish sauce
1 teaspoon finely grated ginger
Place each sheet of rice paper individually into a bowl of warm water for about 1 minute or until softened. Carefully lift from water and place on board.
Place remaining ingredients down centre of rice paper. Fold bottom half of rice paper up, fold in sides. Roll up to enclose filling. Serve with red pepper sauce.
To make the red pepper sauce, combine all ingredients in a small bowl. Whisk to combine ingredients.
