Chili Chicken Wings with Blue Cheese Dip

This recipe can use any one of the following Something Special products:
Gourmet Red Chili  •  Red Chili Pepper Spread  •  Gourmet Jalapeno  •  Gourmet Pomegranate
Spicy, succulent chicken wings made with Something Special Red Chili or Jalapeno Dip and hot sauce. Served with blue cheese dip on the side to cool things down.

1/2 cup your favourite Something Special Dip or Spread
1 cup (240ml) hot sauce (Franks Red Hot is best)
2 tablespoons butter, melted
2 tablespoons white vinegar
3 Tablespoons vegetable oil
2 1/2 (1.5kg) pounds chicken wings, tips removed, cut into wings and drumettes

BLUE CHEESE DIP
2/3 cup mayonnaise
1/3 cup (80ml) buttermilk
1/2 cup blue cheese crumbles (4 oz., 125g)
3 celery stalks, rinsed, ends trimmed and cut into bite-size sticks

Preheat oven to 400º F (200ºC).

Mix together Something Special Red Chili (or Jalapeno) Dip, hot sauce and melted butter and vinegar in a large bowl. Set aside .

Mix together blue cheese dip ingredients in a medium bowl and refrigerate until ready to serve.

Brush foil-lined, baking sheet with 1 tablespoon oil. Wash and pat dry chicken. Transfer wings to large bowl with remaining 2 tablespoons oil and toss to coat. Place wings on baking sheet and cook until done, turning once, 40 minutes.

Transfer cooked wings to bowl with hot sauce mixture and toss to coat well .

Keep warm on baking sheet in oven or transfer to platter and serve immediately with blue cheese dip and celery sticks. Serves 8 as an appetizer.
