Spicy Chicken Stir-Fry with Orangey Red Chili Sauce
This recipe can use any one of the following Something Special products:
Gourmet Red Chili •
Red Chili Pepper Spread
Appetizing in appearance and flavour, this stir-fry is a family favourite! Serve with rice.INGREDIENTS for sauce:
1 ½ cups (350 mL) orange juice
¼ cup (60 mL) soya sauce
¼ cup (60 mL) hoisin
¼ cup (60 mL)
Red Chili Pepper Spread or Gourmet Red Chili1 teaspoon (5 mL) sesame oil
½ teaspoon (2.5 mL) dried red chili flakes (optional)
2 teaspoons (10 mL) grated fresh ginger
3 tablespoons (45 ml) cornstarch
Whisk together sauce ingredients and set aside.
INGREDIENTS for Stir-Fry:
4 cloves garlic, chopped
4 skinless-boneless chicken breasts, cubed
2 large bell peppers (any colour or combination), chopped
1 cup (250 mL) snow peas, trimmed and chopped in half
1 tablespoon (15 mL) canola oil
METHOD
1. Heat oil in a wok or large fry pan over med-high heat.
2. Add garlic and stir-fry until just starting to brown. Add cubed chicken and stir-fry until chicken is cooked through and is no longer pink.
3. Add chopped peppers and snow peas and stir-fry for 2 more minutes.
4. Whisk sauce ingredients and pour into pan. Stir constantly until sauce is thickened slightly and sauce is clear, about 2 more minutes.
5. Serve with cooked rice.
