Chicken Antipasto Lettuce Wraps
This recipe can use any one of the following Something Special products:
Gourmet Antipasto Original •
Gourmet Antipasto Vegetarian
1 tablespoon canola (or peanut) oil
1 lb (500g) ground chicken
1 cup
Something Special Gourmet Antipasto1/4 cup chopped fresh cilantro
2 tablespoons lime juice
8 lettuce large leaves
1/2 English cucumber, seeded and chopped
1 cup grated carrot
2 cups steam fried noodles
Heat oil in a large frying pan over medium-high heat. Add chicken and cook, stirring and breaking up any large lumps, for about 10 minutes or until cooked and lightly browned.
Remove from heat. Add Something Special Gourmet Antipasto, cilantro and juice. Stir until well combined. Spoon into lettuce leaves. Top with remaining ingredients. Serve immediately. Serves 4.
