This recipe can use any one of the following Something Special products:
Gourmet Red Chili
• Red Chili Pepper Spread
• Gourmet Jalapeno
• Gourmet Pomegranate
Tortilla chips layered with seasoned ground beef spiced with Something Special Jalapeno or Red Chili Dip, topped with sour cream or crème fraiche, olives and cheddar cheese. These will fly off the plate.
1/4 cup your favourite Something Special Dip or Spread
2 tablespoons tomato paste
1 packet taco seasoning
1 lbs (500g) cooked ground beef, fat drained, (2 cups)
64 tortilla chips, unbroken
3/4 cup sour cream or crème fraiche
1 1/2 cups shredded cheddar cheese, (6 oz., 170g)
1/4 cup sliced black olives
1/4 cup chopped fresh cilantro, optional
In a medium saucepan over low heat, combine Something Special Jalapeno (or Red Chili) Dip, tomato paste, taco seasoning and cooked, ground beef. Mix well and heat through. Remove from heat and set aside.
Place tortilla chips on parchment-lined baking sheets. Layer each chip with 1 1/2 teaspoons (heaping teaspoon) seasoned ground beef, 1/2 teaspoon sour cream, sliced olives and shredded cheese.
Place under broiler until cheese is melted, about 2 minutes. Sprinkle with chopped cilantro, if desired. Transfer to platter and serve warm. Makes 64 bites.
