Goat’s Cheese & Pistachios with Crostini
This recipe can use any one of the following Something Special products:
Gourmet Red Chili
• Red Chili Pepper Spread
This recipe is particularly delicious with Red Chili Pepper Spread or Gourmet Red Chili (but any of our dips will do nicely).INGREDIENTS
1 small package goat’s cheese
½ cup (125 mL) pistachios, shelled and chopped
1 baguette, sliced diagonally
Olive oil (optional) for basting baguette
¼ cup (75 mL) Something Special
product of your choice METHOD
1. Put chopped pistachios on a cutting board and roll goat cheese in nuts to completely cover.
2. Broil lightly under the broiler on medium heat, if desired, to toast nuts and soften cheese slightly.
3. Brush baguette slices lightly with olive oil and broil until golden brown.
4. Place goat cheese with pistachios in the center of a serving platter and top with the Something Special
product of your choice. Arrange toasted baguette slices around and serve.
Serves 4 - 6 as an appetizer.
