Antipasto Lamb & Garlic Meatballs
This recipe can use any one of the following Something Special products:

Gourmet Antipasto Vegetarian
1 lb (500g) ground lamb
1 cup grated onion
4 garlic cloves, minced
1 1/2 cups fresh breadcrumbs
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1/2 cup finely grated, fresh Parmesan cheese
1 egg, lightly beaten
salt and freshly ground pepper
1 tablespoon olive oil
2 cups
Something Special Gourmet Antipasto1/3 cup pine nuts, toasted
cooked pasta to serve, optional
Line baking sheet with parchment paper. Preheat the oven to 350F (180C).
Place lamb, onion, garlic, breadcrumbs, basil, parsley, cheese, egg and a pinch of salt and pepper in a large bowl. Stir until well combined.
Shape mixture into heaped 1 tablespoon balls. Heat oil in large frying pan over medium-high heat. Cook meatballs in batches for about 5 minutes or until browned all over. Place on prepared baking sheet and bake in preheated oven for about 25 minutes or until browned and cooked through.
Heat the Something Special Gourmet Antipasto in same frying pan over medium-high heat until hot. Add the meatballs and gently stir until they are coated. Serve hot with pasta if desired. Serves 4.
