Sausage and Corn Muffins

This recipe can use any one of the following Something Special products:
Gourmet Red Chili  •  Red Chili Pepper Spread  •  Gourmet Jalapeno  •  Gourmet Pomegranate
2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoons ground cumin
1/2 cup grated smoked cheddar cheese
1/2 cup roasted chopped red pepper
1 cooked chorizo sausage, finely chopped
6 green onions, thinly sliced
salt and freshly ground black pepper
11 oz (310g) can creamed corn
2 eggs, lightly beaten
1/3 cup canola oil
1 cup buttermilk
1/3 cup your favourite Something Special Dip or Spread

Grease a muffin pan. Preheat oven to 375F (190C). Combine flour, baking powder, cumin, cheese, red pepper, sausage, green onions, salt and pepper in a large bowl. Make a well in centre.

Whisk remaining ingredients in medium bowl until combined. Add to flour mixture. Stir until mixture just comes together. Do not over mix. Spoon into prepared pan. Bake in preheated oven for about 25 minutes or until muffins are cooked and a skewer comes out clean when inserted in centre of a muffin. Let stand in pan for 5 minutes before turning onto wire rack to cool. Makes 12.
