Garlic and Sage Potatoes
This recipe can use any one of the following Something Special products:
Gourmet Red Chili
• Red Chili Pepper Spread
• Gourmet Jalapeno
• Gourmet Pomegranate
1 lb (500g) little new potatoes
3 tablespoons your favourite Something Special Dip or Spread
1 tablespoon grainy mustard
pinch of salt
1/4 teaspoon freshly ground pepper
2 tablespoons olive oil
1 clove garlic, chopped finely
12 sage leaves
Cook whole potatoes in a large pot of salted water for 12 to 15 minutes or until almost cooked. Drain well and cool slightly. Press your thumb into each potato to squash them a little.
Combine Something Special Jalapeno (or Red Chile) Dip, mustard, salt and pepper in a small bowl and set aside.
Heat oil in a large frying pan over low heat. Add garlic and sauté gently until softened. Turn heat up to medium-high. Add potatoes and sauté for about 5 minutes on each side or until golden. Add reserved Something Special Jalapeno (or Red Chile) Dip mixture and sage leaves and stir to combine. Cook until potatoes are glazed. Serves 4.
