Chicken and Antipasto Bake

This recipe can use any one of the following Something Special products:
Gourmet Antipasto Original  •  Gourmet Antipasto Vegetarian
1 tablespoon olive oil
12 bone-in chicken thighs, skin removed
1 cup dry white wine
10 oz (540 ml) can navy beans, rinsed and drained
2 cups Something Special Gourmet Antipasto
1 cup dry breadcrumbs
1 1/2 cups grated white cheddar cheese

Grease a casserole dish. Preheat oven to 375F (190).

Heat oil in large frying pan over medium-high heat. Cook chicken in batches until browned all over. Place in prepared dish. Add wine to same frying. Add beans and Something Special Gourmet Antipasto. Pour over chicken. Cook, uncovered, in preheated oven for 30 minutes. Combine breadcrumbs and cheese in small bowl. Sprinkle over chicken. Bake a further 30 minutes or until topping is golden and chicken is tender. Serves 6 to 8.
